Prepare the Pasta

    Cook the Linguine

    Bring a large pot of salted water to a boil. Add the linguine and cook according to package instructions until al dente, usually about 8-10 minutes. Reserve 1 cup of pasta cooking water and then drain the linguine.

Prepare the Sauce

    Cook the Bacon and Prosciutto

    In a large skillet over medium heat, add the bacon and cook until crispy, about 5-7 minutes. Add the prosciutto and cook for an additional 2-3 minutes until it is slightly crispy. Remove from heat and set aside.

    Sauté Garlic and Peas

    In the same skillet, add minced garlic and sauté for about 1 minute until fragrant. Then, add the frozen peas and cook for another 2-3 minutes until heated through. Remove from heat.

    Make the Creamy Sauce

    In a bowl, whisk together the heavy cream, egg yolks, grated Parmesan cheese, black pepper, and a pinch of salt. Ensure the mixture is well combined.

Combine and Serve

    Combine Pasta and Sauce

    Return the skillet with bacon, prosciutto, garlic, and peas to low heat. Add the drained linguine and the creamy sauce mixture. Toss everything together gently, adding reserved pasta water as needed to achieve a creamy consistency.

    Serve immediately with extra grated Parmesan and black pepper on top, if desired.
