Chicken Parmesan

    Prepare Chicken

    Preheat your oven to 375°F (190°C). Season chicken breasts with salt and black pepper on both sides.

    Bread the Chicken

    Set up a breading station: In one bowl, place the flour. In a second bowl, beat the eggs. In a third bowl, place the bread crumbs. Dredge each chicken breast in flour, dip in the beaten eggs, and then coat with bread crumbs.

    Cook the Chicken

    In a large skillet, heat olive oil over medium heat. Add the breaded chicken breasts and sauté for about 4-5 minutes per side, or until golden brown. Once cooked, place the chicken in a baking dish.

    Add Sauce and Cheese

    Top each chicken breast with light tomato sauce and sprinkle mozzarella cheese on top. Bake in the preheated oven for about 15-20 minutes, or until the cheese is bubbly and golden.

    Cook the Pasta

    In a large pot, bring 4 cups of water to a boil. Add 1 tsp of salt. Once boiling, add the penne pasta and cook according to package instructions, usually around 11-13 minutes, until al dente. Drain and set aside.

Salad

    Prepare Salad

    In a large bowl, combine mixed greens, halved cherry tomatoes, and sliced cucumber. In a small bowl, whisk together olive oil, balsamic vinegar, salt, and black pepper to create a dressing. Drizzle over the salad just before serving.
