Cooking the Cioppino

Sauté Garlic
In a large pot or Dutch oven, heat the olive oil over medium heat. Add the minced garlic and crushed red pepper flakes. Sauté for 1-2 minutes, or until the garlic is fragrant and lightly golden.

Add Tomatoes and Stock
Stir in the canned crushed tomatoes and fish stock (or clam juice). Bring the mixture to a simmer and let it cook for about 5 minutes, allowing the flavors to meld.

Season the Sauce
Add dried oregano, salt, and black pepper to taste, stirring to combine. Adjust seasoning as needed.

Sprinkle chopped fresh parsley over each bowl and serve with lemon wedges on the side for squeezing over the cioppino.
