Prepare Vegetables

Wash all vegetables thoroughly under cool running water.

Trim carrot tops if needed and pat carrots dry. If carrots are large, cut into 2–3 inch sticks; for baby carrots leave whole.

Trim cucumber ends, peel if desired, then slice lengthwise and cut into 3–4 inch spears or rounds about 1/2 inch thick depending on preference.

Core the red bell pepper, remove seeds and membranes, then cut into 3–4 inch strips. If using mini sweet peppers, halve lengthwise and remove seeds.

Wash cherry tomatoes and leave whole. Trim celery stalks, remove strings if tough, and cut into 3–4 inch sticks.

Trim radish roots and greens, then halve or quarter radishes depending on size for bite-sized pieces.

Arrange all prepared vegetables on a large platter or divided serving board, grouping by type for an attractive presentation.

Make Herb Yogurt Dip

Combine base

In a medium bowl, add 1 cup plain Greek yogurt and 2 tablespoons mayonnaise. Stir until smooth and uniform in texture.

Add herbs and aromatics

Add 1 tablespoon each of finely chopped fresh dill and parsley and 1 tablespoon chopped chives to the yogurt mixture. Add 1 minced garlic clove and 1 tablespoon fresh lemon juice. Stir to combine.

Season and finish

Drizzle in 1 teaspoon extra-virgin olive oil, then season with 3 teaspoons salt and 1 teaspoon freshly ground black pepper. Taste and adjust: add more lemon for brightness, more salt for seasoning, or a pinch of sugar (optional) if too tangy.

For best flavor, cover the dip and refrigerate for at least 15–30 minutes to allow herbs to meld. If serving immediately, transfer to serving bowl and continue to garnish as desired.

Plate & Serve

Spoon the chilled herb yogurt dip into a shallow bowl and place at the center or edge of the vegetable platter.

Dust the top of the dip lightly with smoked paprika (optional) and sprinkle toasted sesame seeds or crushed nuts if using.

Place lemon wedges on the platter for guests to squeeze over vegetables if desired.

Serve immediately, or keep covered and refrigerated for up to 24 hours. If storing, drain any excess liquid before serving and stir the dip to recombine.
