Prepare glass

Chill a coupe or old-fashioned glass by filling it with ice water while you assemble the cocktail ingredients.

Dry shake (if using egg white)

If using egg white for a silky foam, combine 2 oz Tullamore D.E.W., 0.75 oz fresh lemon juice, 0.75 oz simple syrup, and 0.5 egg white in a cocktail shaker without ice. Seal and shake vigorously for 15–20 seconds to emulsify and build foam.

Wet shake

Add a generous handful of ice (about 1 cup) to the shaker. Add 2 dashes of Angostura bitters. Seal and shake hard for 10–15 seconds until the shaker is very cold and slightly frosted.

Strain and serve

Dump the ice water from the chilled glass and double-strain the cocktail into the chilled coupe or over fresh large ice in an old-fashioned glass, depending on your preference.

If you prefer a lighter finish, top the cocktail with 1 oz of club soda and give it a gentle stir to integrate.
