Prepare and cut potatoes

Preheat oven to 425°F (220°C) if baking, or prepare a large skillet with 1 cup vegetable oil and heat to 350°F (175°C) if frying. Wash and peel (optional) the sweet potatoes. Cut into 1/4- to 1/2-inch thick sticks, aiming for even thickness so they cook uniformly. Rinse cut fries under cold water to remove excess surface starch, then pat completely dry with a clean kitchen towel or paper towels.

Coat fries

Place dried sweet potato sticks in a large bowl. Sprinkle with the cornstarch and toss until lightly and evenly coated. Drizzle with olive oil and toss again. In a small bowl combine salt, pepper, smoked paprika, and ground cinnamon; sprinkle over the fries and toss to evenly distribute the seasoning.

Line two baking sheets with parchment paper and spread fries in a single layer, giving space between pieces (use two sheets if necessary to avoid crowding). Bake on the middle rack for 15 minutes, rotate pans and flip fries, then bake another 10-12 minutes until edges are crisp and centers are tender. If you want extra crispness, broil 1-2 minutes watching closely. Remove from oven and let rest 3 minutes before serving.

Fry method (optional)

Carefully add fries in small batches to the heated oil so they do not stick together. Fry 3-4 minutes per batch until golden and slightly crisp. Use a slotted spoon to transfer to a paper towel-lined tray; season with an extra pinch of salt while hot. Allow oil to return to temperature between batches.

Finish

If desired, sprinkle a light additional dusting of cinnamon or flaky sea salt over the finished fries. Serve warm alongside the cinnamon cream cheese dip.

Soften and mix: Make sure the cream cheese is at room temperature for smooth blending. In a medium bowl, use a fork or small whisk to beat the softened cream cheese until smooth.

Add remaining ingredients: Add the sour cream (or Greek yogurt), powdered sugar, ground cinnamon, vanilla extract, lemon juice, and a pinch of salt. Whisk or stir until completely smooth and creamy, scraping down the sides of the bowl. Taste and adjust sweetness or cinnamon to preference.

Chill and serve: For best texture and melded flavors, chill the dip 15–30 minutes before serving. If the dip is too thick, stir in 1 teaspoon of milk at a time until desired consistency is reached. Serve in a small bowl alongside the fries.
