Method
Cocktail
Combine & chill
Add the aged rum, white rum, fresh lime juice, pineapple juice, coconut cream, falernum (if using), simple syrup, and Angostura bitters to a cocktail shaker or mixing glass.
Add ice & shake
Fill the shaker with crushed ice (or add a few large cubes if crushed not available). Secure the lid and shake vigorously for 10–15 seconds, until the exterior of the shaker is frosty and the ingredients are well combined and chilled.
Prepare glass
Fill a double old-fashioned or tiki glass with fresh crushed ice to the top to create a cold bed for the drink.
Strain & serve
Double-strain the shaken cocktail into the prepared glass over the crushed ice. If you prefer a smoother texture, use a fine mesh strainer in addition to the shaker’s strainer.
Garnish
Thread the pineapple wedge and lime wheel on a small cocktail pick and rest it on the rim of the glass. Slap the mint sprig between your palms to release the aromatics and tuck it into the ice. Finish with a light dusting of grated nutmeg, if desired.
Serve immediately with a short straw. Enjoy responsibly.
