Float
If using crushed ice, add 1/4 cup to the bottom of the chilled glass to help maintain temperature (optional).
Place two level scoops of gluten-free vanilla ice cream into the glass. Arrange them so there is space around the scoops for the soda to flow.
Hold the chilled bottle or can of Abita Root Beer at a slight angle and slowly pour about half (approximately 6 fl oz) of the root beer down the side of the glass to reduce foaming. Allow foam to settle for 10–15 seconds.
Carefully pour the remaining root beer down the side of the glass until the foam rises near the rim but does not overflow (total approximately 12 fl oz). If the float foams too much, pause and let it settle before continuing.
Using a long spoon or straw, gently tuck the spoon around the ice cream to break up any overly large foam pockets and to create a smooth top. Do not vigorously stir — you want distinct layers of ice cream and soda.
Top with 1–2 tablespoons of whipped cream if using. Place a maraschino cherry on top for garnish, if desired.
Serve immediately with a long spoon and straw so the guest can enjoy both the creamy ice cream and the root beer. As the ice cream melts it will create a thick, frothy float.
Serving Notes
Recommend serving within 5 minutes of assembly for best texture. Keep additional ice cream in the freezer and root beer chilled until ready to serve.
