Chill glass

Place an old-fashioned glass or rocks glass in the freezer for 5–10 minutes, or fill it with ice water while you prepare the cocktail to chill the glass.

Combine ingredients

In a mixing glass or cocktail shaker filled halfway with ice, add 2 oz Glenlivet 12, 0.75 oz sweet vermouth, 0.25 oz dry vermouth, 0.25 oz honey syrup, and 2 dashes orange bitters.

Stir to dilute

Using a bar spoon, stir the mixture briskly for 20–30 seconds (about 20–30 revolutions) until well chilled and slightly diluted. Stirring preserves the whisky's clarity and silkiness.

Prepare glass and ice

Discard ice or water from the chilled glass. Add one large clear ice cube (or several large cubes) to the glass.

Strain and garnish

Strain the stirred cocktail into the prepared glass over the large ice cube. Express the oils of a lemon twist over the drink by holding the twist skin-side down and giving it a firm bend about 2–3 inches above the liquid, then rub the rim with the twist and drop it into the glass.

Serve immediately. Suggest sipping slowly to appreciate the Glenlivet 12's floral, honeyed notes balanced by the rounded sweetness of vermouth and a hint of citrus from the garnish.

Sweet vermouth choice: use a medium-sweet, lightly herbal vermouth (for example Carpano Antica, Punt e Mes for more bitter edge, or Cocchi for a lighter profile). Honey syrup can be made by stirring equal parts honey and warm water until combined; adjust to taste.
