Chill glass and prepare ice
If desired chill an Old Fashioned or rocks glass by placing it in the freezer for 5–10 minutes or filling with ice and water while you prepare the cocktail. Prepare one large ice cube (or 4–6 regular cubes). Discard chilling ice/water before serving.
Measure and combine
Add 2 oz Elijah Craig Barrel Proof, 0.25 oz simple syrup, and 3 dashes of Angostura bitters into a mixing glass or stirring glass filled with plenty of ice.
Stir
Stir gently but thoroughly for 20–30 seconds (about 15–20 revolutions) until the mixture is well chilled and slightly diluted (the stirring glass should frost on the outside).
Prepare glass
Place a large ice cube into the chilled rocks glass.
Strain
Strain the stirred cocktail over the large ice cube in the rocks glass using a hawthorne or julep strainer to remove ice shards.
Garnish & finish
Express the oils from one piece of orange peel by holding it skin-side down over the glass and giving it a sharp twist, then rub the peel around the rim and drop it into the drink. Optionally add a final 1–2 dashes of Angostura on top if desired.
Serve immediately and enjoy. Provide a small spoon or stirrer for the guest to re-mix as the large ice cube melts.
