Make honey syrup

Combine equal parts honey and hot water (for example 1/4 cup honey and 1/4 cup hot water) in a small jar and stir until fully combined. Cool to room temperature before using. (You only need 1/2 oz for this drink; store remainder refrigerated up to 2 weeks.)

Mix the cocktail

Add 2 oz Dalwhinnie, 1/2 oz honey syrup, 1/2 oz fresh lemon juice and 2 dashes orange bitters into a cocktail shaker. Fill the shaker with about 6 ice cubes. Cap and shake vigorously for 10–12 seconds until the outside of the shaker is frosty and the drink is well chilled.

Prepare glass

Place a single large ice cube or sphere into a chilled old-fashioned (rocks) glass.

Strain and garnish

Double-strain the cocktail from the shaker into the prepared glass over the large ice cube. Express a lemon twist over the drink by holding the twist about 2–3 inches above the glass and giving it a firm twist to release oils, then rub the peel around the rim and drop it into the drink as garnish.

Serve immediately and enjoy the gentle floral-heather notes and light honeyed sweetness of Dalwhinnie balanced by bright lemon and orange bitters.
