Dough & Sauce
Preheat oven to 500°F (260°C). If using a pizza stone, place it in the oven while preheating for at least 30 minutes. If using a baking sheet, lightly oil it and set aside.
On a lightly floured surface, stretch or roll the pizza dough to a 12-inch round (about 1/4-inch thickness). Transfer to a pizza peel dusted with semolina or to the prepared baking sheet.
Spread the tomato sauce evenly over the dough, leaving a 1/2-inch border for the crust (use about 3 tablespoons).
Cheeses
Evenly sprinkle the house blend shredded cheese over the sauced dough (about 1 1/2 cups), leaving space for other toppings.
Scatter the crumbled feta cheese evenly on top (about 3 ounces) so you get salty pockets across the pizza.

Warm 1 tablespoon olive oil in a small skillet over medium heat. Add the baby spinach and a pinch of salt (1/8 teaspoon) and sauté just until wilted, 30–60 seconds. Remove and gently squeeze out any excess liquid. Distribute the wilted spinach over the pizza.
Scatter the marinated tomatoes (about 4 tablespoons) in pieces across the pizza so they’re evenly distributed.
Add thin slices of red onion (about 1/4 cup) across the pizza for brightness and bite.
Season the topping lightly with the remaining salt (1/8 teaspoon) and black pepper (1/8 teaspoon).
Bake & Finish
Slide the pizza onto the preheated stone or place the baking sheet in the oven. Bake at 500°F (260°C) for 8–12 minutes, rotating halfway, until the crust is golden and cheese is bubbling and slightly browned.
Remove the pizza from the oven. Drizzle balsamic glaze (about 2 tablespoons) over the pizza in a thin zigzag or circular pattern. Let rest 2–3 minutes so flavors settle.
Slice into 8 pieces and serve hot.
