Form patties

Divide the 1 lb ground Angus into two equal portions (about 8 oz each). Gently shape each portion into a round patty roughly 4–4.5 inches (10–11 cm) across and about 3/4 inch (2 cm) thick. Make a shallow 1/2-inch-wide dimple in the center of each patty with your thumb to prevent puffing while cooking. Do not overwork the meat.

Season both sides of each patty generously with kosher salt and freshly ground black pepper just before cooking (salt draws moisture out if applied too early).

Preheat grill or pan

Preheat a gas or charcoal grill to medium-high (about 400–450°F / 200–230°C) or heat a heavy skillet or cast-iron pan over medium-high heat. Brush the grill grates or pan lightly with the vegetable oil to prevent sticking.

Cook patties

Place patties on the hot grill or in the pan. Cook undisturbed for 3–4 minutes until a brown crust forms. Flip once and cook another 3–4 minutes for medium doneness (adjust time for desired doneness). If using cheese, place cheese slice on each patty in the last 1 minute of cooking and cover the grill or pan to melt.

Remove cooked patties to a plate and let rest for 3–5 minutes to redistribute juices.

Buns & Toppings

Prepare vegetables

While the patties cook, wash and dry the lettuce leaves. Slice the tomato into 1/4-inch (6 mm) thick rounds. Slice the red onion into thin rings (about 1/8–1/4 inch). If pickles are not sliced, thinly slice to desired thickness.

Toast buns

Spread softened butter evenly on the cut sides of the 2 bakery buns. Toast the buns butter-side-down on the grill or in a skillet over medium heat for 1–2 minutes or until golden brown and lightly crisp. Remove and keep warm.

Assemble burgers

Spread about 1 tablespoon of burger sauce on the bottom half of each toasted bun. Place 1–2 lettuce leaves on the sauce, add one rested beef patty on top of the lettuce, then place 2–3 tomato slices, a few rings of red onion, and 3 sliced pickles. Spread a little sauce on the top bun and close the burger.

Serve immediately with your choice of sides (fries, chips, salad).
