Prepare cucumber
Wash the English cucumber thoroughly. Trim the ends and slice cucumber into 1/4-inch rounds (or half-moons if you prefer). Place the sliced cucumber into a large mixing bowl.
Prepare cheese
If using a block of cheddar, grate or roughly cube enough to measure 1 cup. Scatter the cheddar over the cucumbers in the mixing bowl.
Add optional veggies
If using red onion, thinly slice and separate into rings, then add 1/4 cup to the bowl. Halve cherry tomatoes and add 1/2 cup if using.
Add croutons
Add 1 cup of croutons to the bowl. If you prefer croutons crispier, wait to add until just before serving.
Toss salad
Lightly toss the cucumber, cheddar, optional vegetables, and croutons to combine so ingredients are evenly distributed.
Dressing & Finish
If using bottled dressing
Choose one bottled dressing (ranch, balsamic vinaigrette, or Italian). Drizzle about 1/4 cup (60 ml) over the salad, then toss gently to coat. Taste and add more dressing as desired.
If using olive oil & lemon
In a small bowl or measuring cup combine 2 tablespoons olive oil, 1 teaspoon fresh lemon juice, 1/4 teaspoon salt, and 1/8 teaspoon black pepper. Whisk briefly and drizzle over the salad, then toss gently to combine.
Adjust and serve
Taste the salad and adjust seasoning with additional salt, pepper, or lemon juice as desired. If croutons were held back, add them now for maximum crunch. Serve immediately.
