Lemon Parsley Aioli
Make aioli
In a small bowl combine 1/2 cup mayonnaise, 2 tablespoons finely chopped parsley, 1 tablespoon fresh lemon juice, 1/2 teaspoon lemon zest, 1 minced garlic clove, 1/2 teaspoon Dijon mustard and 1 teaspoon olive oil. Whisk until smooth. Season with 1/4 teaspoon salt and 1/4 teaspoon black pepper; taste and adjust lemon or salt as needed. Cover and refrigerate while preparing the rest of the sandwich so flavors meld (at least 15 minutes).
Grilled Chicken & Sandwich
Prepare chicken
Pound the 2 chicken breasts to an even thickness (about 3/4 inch) for even cooking. Pat dry. In a small bowl mix 2 tablespoons olive oil, 1 teaspoon salt, 1/2 teaspoon black pepper and 1/2 teaspoon garlic powder. Rub mixture evenly over both chicken breasts and let sit 10 minutes at room temperature.
Grill chicken
Heat a grill pan or outdoor grill to medium-high (about 400°F / 200°C). Lightly oil grates. Grill chicken 4–6 minutes per side until internal temperature reaches 165°F (74°C) and exterior has good grill marks. Transfer to a cutting board and rest 5 minutes, then slice each breast into 3–4 diagonal slices.
Toast sourdough
Spread softened butter (2 tablespoons total) thinly on one side of each of the 4 sourdough slices. Place buttered side down on the hot skillet or grill and toast until golden, 1–2 minutes. Flip and toast the other side briefly until warmed and lightly crisp (about 30–45 seconds). If using reserved bacon fat, you may brush a little on the bread for additional flavor.
Assemble sandwiches
Spread about 1 to 1 1/2 tablespoons of the lemon parsley aioli on the top and bottom of each toasted sourdough slice (divide aioli between two sandwiches). On the bottom slice layer 2 leaves of lettuce, 3 slices of grilled chicken, 3 slices of tomato (season tomato lightly with a pinch of salt and pepper), and 3 bacon strips (cut in half if long). Spread a little more aioli on the top slice and close the sandwich. Press gently and cut each sandwich in half diagonally.
