Prep
Mix mayonnaise, ketchup, and hot sauce (if using) in a small bowl; set aside as sandwich spread.
Cook Beef Mixture
Heat a large skillet or flat top over medium-high heat. Add 1 tablespoon oil and let it shimmer.
Add the ground beef to the skillet. Break it up with a spatula or spoon into small chunks. Cook, stirring and chopping, until the beef is mostly browned, about 5–6 minutes.
Use the spatula to press and chop the beef finely — the goal is small, crumbly pieces (this is the 'chopped' step). If excess fat renders, tilt the pan and spoon off a little, leaving enough to keep the mixture moist.
Scatter the torn cheese pieces evenly over the hot beef. Reduce heat to low. Let the cheese soften for 30 seconds, then use the spatula to fold and mix the cheese into the beef until it becomes creamy and coats the meat, about 1 minute more. Remove from heat to prevent overcooking.
Toast Rolls and Assemble
Spread the mayonnaise-ketchup mixture evenly on both cut sides of each roll.
Divide the cheesy chopped beef evenly between the two rolls, piling it into the bottom halves.
Top each sandwich with shredded lettuce, tomato slices, and pickle slices. Add pepper relish or extra hot sauce if desired.
Close the sandwiches, press gently, slice in half if desired, and serve immediately while hot and melty.
