Gravy Preparation

Brown the Meats

In a large pot over medium heat, add the sweet Italian sausage, ground beef, and ground pork. Cook until browned, breaking the meats apart with a wooden spoon, about 8-10 minutes.

Add Aromatics

Add the minced garlic and chopped onion to the pot. Cook for another 3-4 minutes until the onion is translucent.

Combine Tomato Ingredients

Stir in the crushed tomatoes, tomato paste, red wine, oregano, basil, salt, and pepper. Bring to a simmer.

Simmer the Sauce

Reduce the heat to low and let the sauce simmer uncovered for at least 45 minutes, stirring occasionally.

Finish with Fresh Herbs

In the last 5 minutes of cooking, stir in the fresh parsley and basil. Adjust seasoning with additional salt and pepper if needed.

Cook the Linguine

While the gravy simmers, bring a large pot of salted water to a boil. Add the fresh linguine and cook according to package instructions, usually about 2-4 minutes until al dente.

Drain and Combine

Drain the linguine and return it to the pot. Pour a little of the gravy over the pasta, tossing to coat.

Serve the Dish

Plate the linguine and top generously with the remaining gravy. Finish with shaved Parmesan cheese and a sprinkle of fresh herbs if desired.
