Preparing the Grilled Scallops

Marinate Scallops

In a bowl, toss the scallops with olive oil, salt, and black pepper. Let them marinate for about 15 minutes.

Grill Scallops

Preheat your grill to medium-high heat. Grill the scallops for about 2-3 minutes on each side, until they are opaque and have grill marks.

Making the Seasonal Grain Salad

Cook Quinoa

Rinse quinoa under cold water. In a saucepan, combine quinoa and vegetable broth, bring to a boil, then reduce heat and simmer for 15 minutes until liquid is absorbed. Fluff with a fork.

Prepare Vegetables

Chop cherry tomatoes, cucumber, and red onion. Add them to the cooked quinoa along with parsley, lemon juice, salt, and pepper. Mix well.

Making the Champagne Butter Sauce

Sauté Shallots

In a saucepan, melt 1 tablespoon of butter over medium heat. Add chopped shallots and sauté until translucent.

Add Champagne

Pour in champagne and let it reduce by half, about 5 minutes.

Finish Sauce

Reduce heat and stir in the remaining butter and heavy cream. Simmer until thickened, then season with salt and pepper.

Serving

Plate the Dish

On a plate, place a generous serving of the grain salad, top with grilled scallops, and drizzle with champagne butter sauce. Serve immediately.
