Potatoes
Prep and first cook (boil)
Peel the potatoes and cut into even 3–3.5 cm (about 1¼ inch) cubes. Place the potatoes in a large saucepan and cover with cold water by about 2 cm. Add 1 tablespoon of the sea salt. Bring to a gentle boil over medium-high heat, then reduce to a simmer and cook until potatoes are just tender at the edges but still firm in the center, about 10–12 minutes depending on size. Drain thoroughly in a colander for 5 minutes to allow steam to escape.
Mash/rattle and second cook (oven dry)
Return drained potatoes to the warm pan off the heat and add the butter and warmed milk infused with saffron (see next direction). Gently shake the pan for 1–2 minutes or lightly toss with a spatula to rough up the edges — you want the surface of the potatoes to become slightly floury and to expose more surface area for crisping, not a smooth mash. Spread the potatoes on a baking sheet in a single layer with space between pieces. Place in a 200°C / 400°F oven for 20–25 minutes until the outsides start to dry and develop a pale crust. Turn pieces once halfway through for even drying.
Infuse saffron in milk
Warm the milk in a small saucepan until just steaming (do not boil). Remove from heat, crush the saffron threads between your fingers and stir into the warm milk. Let steep 5–10 minutes to extract color and aroma, then add to the potatoes as described above.
First fry (blanch fry)
Heat oil in a heavy pot to 140°C (285°F). Line a tray with paper towels. Carefully add potatoes in batches and fry for 4–6 minutes until the surface is set and begins to take on a pale gold. They should be cooked through but not deeply browned. Remove with a slotted spoon and drain on the tray. Let cool to room temperature (or refrigerate for 20–30 minutes) — this helps create a crispier final fry.
Second fry (crisp finish)
Increase oil temperature to 190–195°C (375–385°F). Fry the potatoes in batches until deep golden-brown and crisp, about 3–5 minutes per batch. Work quickly so they remain hot and crisp. Remove to a wire rack or paper towel-lined tray and immediately season with the remaining sea salt and freshly ground black pepper. If you prefer a shallower finish, heat 2 tablespoons vegetable oil in a heavy skillet over medium-high heat and pan-fry the dried potatoes in batches, pressing gently until all sides are crisp and browned.
Keep warm
If preparing multiple batches, keep cooked potatoes warm on a baking sheet in a 90–100°C (200–210°F) oven until serving, so they stay crisp.
Calabrian Chili Aioli
Make aioli
In a small bowl combine the mayonnaise, Calabrian chili paste, grated garlic, lemon juice, olive oil, smoked paprika (if using), and 1/2 teaspoon salt. Whisk until smooth and homogenous. Taste and adjust seasoning — add a little more chili paste for heat, more lemon for brightness, or a pinch more salt as needed. Cover and refrigerate at least 15 minutes to let flavors meld. Bring to room temperature before serving if chilled.
Finishing & Serve
Plate and garnish
Arrange the triple-cooked saffron potatoes on a serving platter. Spoon or pipe the Calabrian chili aioli alongside or dot the aioli over the potatoes. Sprinkle with flaky sea salt, chopped parsley and a little lemon zest for brightness. Serve immediately while potatoes are hot and crisp.
