Prepare glass and mint

Select a large wine glass or Collins-style glass. Add the fresh mint leaves to the empty glass. Gently bruise the mint with a wooden muddler or the back of a spoon 2–3 times to release aroma — avoid shredding the leaves.

Add ice

Fill the glass with large ice cubes (about 1 cup) so the drink stays cold and dilutes slowly.

Measure and pour

Pour 1 oz St. Germain elderflower liqueur and 0.5 oz fresh lemon juice over the ice and mint.

Add Prosecco

Slowly pour 4 oz chilled Prosecco into the glass. Pour gently down the side to preserve bubbles.

Top with soda

Add 2 oz chilled soda water to taste for brightness and a lighter finish. Stir gently once with a bar spoon to combine — do not over-stir to keep effervescence.

Garnish & serve

Garnish with a lemon slice on the rim or floated in the glass and add an additional mint sprig for aroma. Serve immediately with a straw or stirrer.
