    Prep salmon

    Pat the salmon fillets dry with paper towels. Season both sides evenly with 1.5 tsp salt and 1 tsp black pepper.

    Heat a large nonstick or stainless steel skillet over medium-high heat. Add 2 tbs olive oil and let it shimmer but not smoke.

    Place the salmon fillets in the skillet presentation-side down (skin side down if skin-on). Cook without moving for 3–4 minutes, until a golden crust forms and the sides begin to turn opaque about one-third of the way up.

    Flip the fillets and reduce heat to medium. Cook 2–4 more minutes depending on thickness and desired doneness (aim for internal temperature ~125–130°F / 52–54°C for medium-rare to medium). Remove salmon to a warm plate and tent with foil while finishing the sauce.

White wine & lemon butter (Gamber Salmone butter)

    In a separate medium sauté pan, melt 1 tbs of the butter over medium heat (or use a splash of olive oil if preferred). Add the finely minced shallots (2 tbsp) and cook, stirring, until softened and translucent, about 2–3 minutes—do not brown.

    Add 1 cup dry white wine to the pan and increase heat to medium-high. Bring to a lively simmer and reduce the wine by about two-thirds until the liquid is slightly syrupy and concentrated, about 6–8 minutes.

    Reduce heat to low. Cut the remaining 7 tbs butter into small cubes and whisk them in gradually (or add in small handfuls), letting each addition emulsify into the reduced wine. If the butter is cold, warm it slightly first so it incorporates more easily. This creates a glossy beurre monté-like sauce.

    Stir in 2 tbs fresh lemon juice and 1 tsp lemon zest. If using, add 2 tbs heavy cream now to smooth the sauce and slightly thicken. Season with 1/2 tsp salt and 1/2 tsp freshly ground black pepper; taste and adjust seasoning.

    Fold in 2 tbs finely chopped fresh parsley. Keep the sauce warm on the lowest heat—do not boil, or the emulsion may break.

    If the sauce is too thin, simmer gently a minute longer to concentrate. If it begins to separate, whisk in a teaspoon of cold water or a small cube of cold butter off-heat to bring it back together.

    Spoon the warm white wine & lemon butter generously over the rested salmon fillets, letting some pool around them. Garnish each fillet with a lemon slice and a sprinkle of chopped dill if using.

Optional garnish / serving

    Arrange baby arugula or wilted spinach on plates if desired. Place the sauced salmon on top. Finish with a light dusting of cracked black pepper (1/4 tsp) and the remaining chopped fresh dill (1 tbs). Serve immediately with additional lemon wedges on the side.
