Method

Prepare the Blinis

Cook the Sweet Potatoes

Peel and boil sweet potatoes until tender, about 15-20 minutes. Drain and mash in a bowl.

Make the Batter

In a mixing bowl, combine mashed sweet potatoes, flour, baking powder, and salt. Beat in eggs and milk until smooth. Let rest for 10 minutes.

Cook the Blinis

Heat butter in a skillet over medium heat. Pour small amounts of batter to form rounds. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook for another 2 minutes.

Prepare the Mint Yogurt

Mix Ingredients

In a bowl, combine Greek yogurt, chopped mint leaves, lemon juice, and salt. Mix well and set aside.

Prepare the Salad

Toss the Salad

In a large bowl, combine arugula and grape tomatoes. In a small bowl, whisk together red wine vinegar, olive oil, salt, and pepper. Drizzle over the salad and toss to combine.

Assemble the Dish

Plate the Blinis

Place a blini on each plate, top with mint yogurt, and serve with a side of arugula salad.
