Method
Dumpling Wrappers
Prepare the Dough
In a bowl, mix the all-purpose flour and salt. Gradually add water and knead until a smooth dough forms. Cover and let it rest for 30 minutes.
Roll Out the Wrappers
After resting, divide the dough into small pieces. Roll each piece into thin circles, about 3 inches in diameter.
Filling Preparation
Make the Filling
In a bowl, combine the prawns, ground pork, minced garlic, minced ginger, spring onions, soy sauce, sesame oil, salt, and white pepper. Mix well until combined.
Assemble the Dim Sum
Fill the Dumplings
Place a spoonful of the filling in the center of each wrapper. Fold the wrapper over the filling and pinch the edges to seal tightly.
Cooking
Steam the Dim Sum
Place the dumplings in a steamer lined with parchment paper. Steam for about 15-20 minutes until cooked through.

Make the Soya Ginger Dip
In a small bowl, mix soy sauce, grated ginger, rice vinegar, and chili oil. Adjust chili oil according to taste.
