Pave Preparation

Prepare the Pave

Peel and slice the yams and potatoes into thin rounds. Layer the slices in a baking dish, alternating between yams and potatoes. Dot with butter, and season with salt and pepper. Cover with foil and bake at 350°F (175°C) for 45 minutes, then remove foil and bake for an additional 15 minutes until golden.

Broccolini and Salad Preparation

Cook Broccolini

Blanch broccolini in boiling water for 2-3 minutes, then transfer to ice water to stop the cooking process. Drain and set aside.

Prepare Micro Soya Shitake Salad

Sauté shitake mushrooms in a pan over medium heat until golden. In a bowl, combine sautéed mushrooms and micro soya shoots to create a salad.

Cook Steelhead

Heat a skillet over medium-high heat. Season the steelhead fillet with salt and pepper. Add a little oil to the pan and sear the fish for about 4-5 minutes on each side until cooked through.

Miso Butter Sauce Preparation

Make Miso Butter Sauce

In a small saucepan, combine miso paste, butter, and water. Heat over low heat, whisking until smooth and slightly thickened.

Plate the Dish

On each plate, place a portion of yam and potato pave, top with the steelhead fillet, and drizzle with miso butter sauce. Add broccolini and a serving of the micro soya shitake salad on the side. Finish with a drizzle of chili oil.
