Bring to room temperature
Remove the 6 oz steak from the refrigerator 30 minutes before cooking so it comes closer to room temperature for even cooking.

Pat the steak dry with paper towels. Season both sides evenly with 1/2 tsp kosher salt and 1/4 tsp freshly ground black pepper.

Heat a heavy skillet (cast iron preferred) over medium-high heat until very hot, about 3–4 minutes. Add 1 tablespoon olive oil and swirl to coat.

During the last minute of cooking, add 1 tablespoon unsalted butter, the smashed garlic clove, and the herb sprig (if using). Tilt the pan and spoon the melted butter and aromatics over the steak for 30–60 seconds (basting).

Transfer the steak to a cutting board or plate and tent loosely with foil. Rest for 5–7 minutes before slicing so the juices redistribute.

After peeling and grating the russet potato, place the grated potato in a clean kitchen towel or paper towels and squeeze out as much moisture as possible. This helps create crisp hash browns.

Transfer the dried grated potato to a bowl and season with 1/4 tsp salt and 1/8 tsp black pepper. Mix to combine.

Cook without disturbing 4–5 minutes, until the bottom is golden brown and crisp. Flip in sections or invert onto a plate and slide back into the pan to brown the other side 3–4 minutes more.

Transfer to a warm plate and keep in a low oven (200°F / 90°C) if needed until serving.

Crack two large eggs into a small bowl (or directly into the pan) and gently slide into the skillet. Sprinkle with 1/16 tsp salt and 1/32 tsp pepper.

For sunny-side up: cook slowly 2–3 minutes until whites are set but yolks are runny. For over-easy: cook 2 minutes, gently flip with a spatula, and cook 20–30 seconds more for runny yolks. For over-medium or over-hard, increase flip cook time accordingly. For scrambled: whisk eggs, pour into pan, and stir gently until soft curds form.
