Method

Burger Patties

    Form patties

    Divide the 1 lb ground beef into two equal portions (about 8 ounces each). Gently form each portion into a round patty about 3/4 inch thick and slightly wider than the roll; avoid overworking the meat to keep patties tender. Press a shallow dimple in the center of each patty with your thumb to help them cook evenly.

    Season

    Generously season both sides of each patty with kosher salt and freshly ground black pepper immediately before cooking.

    Cook patties

    Heat a large skillet or griddle over medium-high heat and add 1 tablespoon vegetable oil, spreading to coat. When the pan is hot and shimmering, place patties in the pan. Cook without moving for 3-4 minutes until a brown crust forms. Flip and cook 2-3 minutes more for medium (adjust time for desired doneness). During the last 30-45 seconds of cooking, place one slice of American cheese on each patty, cover the pan briefly with a lid to melt the cheese.

Thousand Island Dressing

    While the patties cook (or up to a day ahead), combine 1/4 cup mayonnaise, 2 tsp ketchup, 2 tsp sweet pickle relish, 1/2 tsp white wine vinegar, 1/2 tsp pickle brine, 1 tsp very finely minced onion, 1/8 tsp salt, and a pinch (1/16 tsp) black pepper in a small bowl. Whisk until smooth. Taste and adjust balance (add more relish for sweetness, more vinegar for tang). Refrigerate until assembling the burger.

Onion Rolls & Assembly

    Toast rolls

    Split the 2 onion rolls. Spread about 1/2 tablespoon softened butter on each cut side. After patties are nearly done, place the rolls butter-side-down in a clean skillet or on the griddle over medium heat and toast 1-2 minutes until golden and crisp. Remove from heat.

    Assemble burgers

    Spread about 1-2 tablespoons Thousand Island dressing on the bottom half of each toasted onion roll. Place the cheese-topped beef patty on the dressed bottom roll. Top each patty with 2 pickle slices, 2 tomato slices, about 2 tablespoons shredded iceberg lettuce, and a sprinkle (about 1 tablespoon) of thinly sliced red onion. Spread a little dressing on the top roll if desired, then cap the burger.

    Serve

    Serve cheeseburgers immediately while hot. Optionally serve with fries, chips, or a side salad.
