Inspect and clean
Rinse the oysters under cold running water to remove loose grit. Use a stiff brush to scrub shells. Discard any oysters with cracked or open shells that do not close when tapped.

Prepare workspace
Place a folded thick kitchen towel on a sturdy work surface. Fold another towel over the oyster you will shuck, or wear a cut-resistant glove to protect your hand. Keep the oyster knife and a small bowl handy.

Shuck oysters
Hold the oyster cup-side down with the hinge (pointed end) facing you. Insert the tip of the oyster knife into the hinge and twist gently until you feel the shell pop. Slide the knife along the top shell to sever the adductor muscle, then lift off the top shell. Slide the knife under the oyster meat to cut the bottom muscle, leaving the oyster sitting in its bottom shell with its liquor (natural juice) intact. Repeat until all 3 oysters are shucked.

Check and loosen
Check each oyster for shell fragments and remove any grit or shell pieces. Ensure each oyster is loose in its shell so it can be eaten easily.

Prepare crushed ice bed
Pile crushed ice (about 2 cups) on a serving platter or individual plates to create a stable bed that keeps oysters level and cold.

Arrange oysters
Place the shucked oysters on the bed of crushed ice, cup-side down so the liquor pools in the shell.

Add lemon and sauces
Cut 1 lemon into wedges and place on the platter. Spoon mignonette and cocktail sauce into small bowls and place alongside. Provide hot sauce and freshly ground black pepper if desired.

Serve
Serve immediately while oysters are cold and fresh. To eat, squeeze lemon over the oyster or add a small spoonful of mignonette or cocktail sauce, then tip the shell to the mouth and slurp the oyster with its liquor. Discard shells after eating.

If you do not have pre-made mignonette, make a quick version: combine 3 tablespoons red wine vinegar, 1 tablespoon finely minced shallot (not listed above; use as optional to taste), and 1/4 teaspoon freshly ground black pepper. Stir and let sit for 10 minutes before serving. Adjust quantities to taste.
