Black Tea (Breakfast)

Heat water

Bring 8 oz (about 240 ml) of fresh cold water to a rolling boil (212°F / 100°C). Use a kettle or saucepan.

Steep

Place 1 black tea bag in a cup. Pour the boiling water over the tea bag. Cover the cup (to trap heat) and steep for 3–5 minutes depending on desired strength (3 minutes for lighter, 5 minutes for strong breakfast tea).

Finish

Remove and discard the tea bag. Stir in 1 tablespoon milk and 1 teaspoon sugar if desired. Taste and adjust milk or sweetener to preference. Serve immediately.

Earl Grey Tea

Heat water

Bring 8 oz (about 240 ml) of fresh water to a gentle boil. Earl Grey is best brewed with water just off the boil (about 200–205°F / 93–96°C).

Steep

Place 1 Earl Grey tea bag (or 1 tsp loose leaf in an infuser) in a cup. Pour the hot water over the tea. Cover and steep for 3–4 minutes. Steeping longer can increase bitterness and intensify bergamot flavor.

Finish

Remove the tea bag or infuser. Add a slice of lemon or 1 teaspoon honey if desired. Stir and serve hot.

Green Tea

Heat water

Heat 8 oz (about 240 ml) of water until it reaches about 175–185°F (80–85°C). Do not boil; boiled water cools slightly before pouring if necessary.

Steep

Place 1 green tea bag (or 1 tsp loose leaf in an infuser) in a cup. Pour the hot water over the tea. Cover and steep for 1.5–3 minutes depending on desired strength and type of green tea (lighter for delicate greens, up to 3 minutes for heartier greens).

Finish

Remove the tea bag or infuser. Add 1 teaspoon honey or agave if desired, stir gently, and serve. Avoid over-steeping to prevent bitterness.
