Decide which meat you'll serve: bacon, sausage links, or a ham slice. Prepare a large nonstick or cast-iron skillet and heat it over medium. For bacon: lay 3 strips in the cold skillet, then turn heat to medium and cook 4–6 minutes, flipping occasionally, until crisped to your liking. Transfer to a paper-towel–lined plate to drain; keep skillet for hash browns and eggs.

For sausage links: add 2 links to the skillet and brown over medium heat, rolling occasionally, 2–3 minutes. Add 2 tablespoons water, cover, and let steam 4–6 minutes until cooked through (internal temp 160°F/71°C). Remove and keep warm.

Preheat and prepare
If using fresh shredded potato, squeeze out excess moisture with a clean towel and pat dry. If frozen, thaw slightly and pat dry. Heat 1 tablespoon vegetable oil and 1 tablespoon butter in the same skillet used for the meat over medium-high heat until shimmering.

Add 1 cup shredded hash browns in an even layer and press down with a spatula. Season the top with 1/4 teaspoon salt and 1/8 teaspoon black pepper. Cook undisturbed 4–6 minutes until the underside is golden and crisp.

Scrambled (hotel-style)
Lower heat to medium-low and add 1 tablespoon butter to the skillet. In a small bowl, whisk 2 large eggs with a pinch of salt (about 1/8–1/4 tsp) and a pinch of pepper. Pour eggs into the skillet and let them set for 10–15 seconds, then gently push cooked edges toward the center with a spatula, tilting the pan to allow uncooked egg to flow underneath. Continue folding gently until eggs are softly set but still creamy, about 1–2 minutes. Remove from heat; residual heat will finish them.

Fried (sunny-side or over-easy)
If you prefer fried eggs: heat 1 teaspoon butter over medium. Crack eggs into the skillet (one at a time) and cook sunny-side up 2–3 minutes until whites are set; for over-easy, flip gently and cook 10–20 seconds more for slightly runny yolks. Season with salt and pepper.
