    Prep vegetables and sausage

    Clean mushrooms with a damp paper towel and slice them about 1/4" thick. Peel and thinly slice the onion. Mince the garlic. Remove sausage from casings by slicing lengthwise and squeezing/pulling meat out in large chunks; break into bite-sized pieces with your hands or a spoon.

    Brown sausage

    Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the sausage pieces in a single layer (work in two batches if needed). Cook, stirring occasionally and breaking up large pieces, until well browned and cooked through, about 6–8 minutes. Transfer browned sausage to a plate and set aside, leaving rendered fat in the pan.

    Sauté onion and mushrooms

    Reduce heat to medium and add remaining 1 tablespoon olive oil and 1 tablespoon butter to the skillet. Add the sliced onion and a pinch of salt; cook, stirring, until the onion begins to soften and turn translucent, about 4 minutes. Add the sliced mushrooms and spread them in an even layer. Let them cook undisturbed 3–4 minutes to develop color, then stir and cook another 3–4 minutes until mushrooms have released their liquid and begin to brown.

    Add garlic and deglaze

    Add the minced garlic and red pepper flakes (if using) and cook 30–60 seconds until fragrant. Pour in the white wine (or 1/4 cup chicken stock) to deglaze the pan, scraping up any brown bits from the bottom with a wooden spoon. Let the wine reduce by half, about 1–2 minutes.

    Finish with broth and return sausage

    Stir in the chicken broth and Dijon mustard (if using). Return the cooked sausage and any accumulated juices to the skillet. Bring the mixture to a gentle simmer and cook uncovered for 5–7 minutes so the flavors meld and the sauce reduces slightly. Taste and season with kosher salt and freshly ground black pepper as needed.

    Finish and garnish

    Stir in the chopped parsley and 1 tablespoon grated Parmesan. Cook 30 seconds more, then remove from heat. Garnish with extra parsley and an additional sprinkle of cheese before serving.
