    Mix and Activate

    In a large bowl, combine warm water (about 105–115°F / 40–46°C) with sugar and instant yeast. Stir and let sit 5 minutes until foamy. Add olive oil, flour, and salt. Stir until a shaggy dough forms.

    Knead

    Turn dough onto a lightly floured surface and knead 6–8 minutes until smooth and elastic. Alternatively, use a stand mixer with a dough hook on medium speed for 5 minutes.

    First Rise

    Lightly oil a bowl, place the dough inside, cover with plastic wrap or a damp towel, and let rise in a warm place until doubled, about 1 to 1¼ hours.

Sauce

    Prepare Sauce

    While dough rises, mince garlic. In a small saucepan, heat 1 tsp olive oil over medium heat, add garlic and cook 30 seconds until fragrant (do not brown). Add crushed tomatoes and tomato paste, stir to combine. Add dried oregano, dried basil, salt, and black pepper. Simmer gently 10–12 minutes until slightly thickened. Remove from heat and let cool to room temperature.

    Prepare Mushrooms

    Clean and thinly slice mushrooms. Toss with 1 tsp olive oil and a pinch of salt. Spread on a paper towel or a sheet pan so they release a bit of moisture while you prepare the dough and oven.

    Prepare Other Toppings

    Shred mozzarella and arrange pepperoni slices so they are ready to top the pizza. If using fresh basil, wash and pat dry, keep leaves whole to add after baking.

    Preheat Oven

    Place a pizza stone or an inverted baking sheet in the oven and preheat to 500°F (260°C) for at least 30 minutes (or as hot as your oven will safely go). If using a lower max temperature, preheat to the highest setting.

    Shape Dough

    Once dough has doubled, punch it down and turn onto a lightly floured surface. For a 12–14 inch pizza, gently stretch or roll dough into a 12-inch round, leaving a slightly thicker rim. Transfer to a pizza peel or baking sheet dusted with cornmeal or flour.

    Add Sauce and Cheese

    Spread ½ to ⅔ cup of the prepared tomato sauce over the dough, leaving the edge bare. Sprinkle the shredded mozzarella evenly over the sauce.

    Add Toppings

    Distribute the sliced mushrooms evenly over the cheese, then arrange pepperoni slices on top. Sprinkle crushed red pepper flakes evenly if using.

    Bake

    Slide the pizza onto the preheated stone or baking sheet. Bake for 8–12 minutes at 500°F (or 10–15 minutes at lower high heat) until crust is golden and cheese is bubbling and beginning to brown.

    Remove pizza from oven and transfer to a cutting board. Brush the crust lightly with 1 tsp olive oil. Scatter fresh basil leaves over the hot pizza if using. Let rest 2–3 minutes, then slice and serve.
