Assemble and spread
Lay the two bread slices flat. On one slice, spread the mayonnaise evenly to cover the surface. On the other slice, spread the mustard evenly. This creates balanced flavor and prevents sogginess.

Layer ingredients
Place the sliced cheddar cheese on the mustard-spread slice. Top the cheese with the three slices of deli ham, arranging them so they slightly overlap and cover the cheese. Add the optional pickle slices on top of the ham if using. Lightly sprinkle the black pepper over the ham.

Close and butter
Close the sandwich by pressing the mayo-spread slice onto the ham side. Use a knife to evenly butter the outer faces of both bread slices with the 1 tablespoon of butter; this will help achieve a golden exterior when toasting.

Toast (pan method)
Heat a nonstick skillet or fry pan over medium heat. Place the sandwich into the pan and cook 2–3 minutes until the buttered side is golden brown and crisp. Gently flip and cook the other side 2–3 minutes until golden and the cheese is melted. If cheese is slow to melt, lower heat to medium-low and cover the pan for 1–2 minutes to trap heat and finish melting.

Remove the sandwich from the pan and let rest 1 minute, then slice diagonally if desired. Serve hot.
