Pizza Dough & Assembly

Finishing

Method

Pizza Dough & Assembly

  1. 1

    Preheat

Position an oven rack in the lower-middle position and preheat the oven to 500°F (260°C). If using a pizza stone, place it in the oven while preheating. If you have a baking sheet, leave it empty in the oven to heat for 15 minutes.

  2. 2

Lightly flour a clean work surface with 1–2 tablespoons of all-purpose flour. Stretch or roll the pizza dough into a 12-inch (30 cm) round (or desired shape) about 1/4-inch thick. Transfer the shaped dough to a piece of parchment paper or a lightly floured pizza peel.

  3. 3

Brush the outer 1/2-inch rim of the dough with 1 tablespoon olive oil to help it brown and crisp during baking.

Sauce & Cheese

  1. 4

Evenly spoon 3 tablespoons of tomato pizza sauce onto the stretched dough, leaving the oiled outer rim bare. Spread the sauce with the back of the spoon in a thin, even layer.

  2. 5

Sprinkle 1 1/2 cups shredded mozzarella evenly over the sauce, leaving the crust exposed.

  3. 6

If using, lightly sprinkle 2 teaspoons grated Parmesan over the mozzarella for extra flavor.

Toppings

  1. 7

Distribute 1 cup of thinly sliced or diced cooked ham evenly over the cheese.

  2. 8

Scatter pineapple chunks (about 3 oz) across the pizza so each slice will have some. If using canned pineapple, be sure to drain and pat dry to avoid excess moisture.

  3. 9

If using, add 1/4 cup thinly sliced red onion in a single layer so it softens and slightly caramelizes in the oven.

  4. 10

Lightly season the assembled toppings with 1/4 teaspoon salt, 1/8 teaspoon black pepper and 1/2 teaspoon red pepper flakes (adjust red pepper flakes to taste).

Baking & Finishing

  1. 11

Using the parchment paper or a lightly floured pizza peel, transfer the pizza to the preheated pizza stone or hot baking sheet. Bake at 500°F (260°C) for 8–12 minutes, rotating once after 5–6 minutes if your oven has hot spots, until the crust is golden-brown and the cheese is bubbling and lightly browned.

  2. 12

Remove the pizza from the oven and transfer to a cutting board. Let rest 2 minutes to set. Tear and scatter fresh basil leaves over the hot pizza, if using.

  3. 13

Slice into 6–8 slices and serve immediately.
