Combine and steep

In a large jar or pitcher, add 1 cup coarsely ground coffee and 4 cups cold filtered water. Stir gently to ensure all grounds are wet.

Steep time

Cover the jar and refrigerate or keep at room temperature to steep for 12 to 18 hours (longer yields stronger concentrate).

Strain

After steeping, strain the mixture through a fine mesh sieve lined with cheesecloth or a coffee filter into a clean container. Press gently to extract liquid; discard grounds. You should have roughly 3 to 3.5 cups of cold brew concentrate.

Dissolve protein

Place 2 scoops vanilla protein powder in a small bowl or measuring cup. Add 3 tablespoons hot (not boiling) water and whisk briskly until a smooth paste forms with no lumps. This prevents clumping when mixed into cold liquid.

Combine milk and sweetener

In a separate container, combine 1 cup unsweetened almond milk, 1 tablespoon liquid sweetener, and 1/2 teaspoon vanilla extract. Stir until sweetener is dissolved.

Mix protein with milk

Pour the dissolved protein paste into the milk mixture and whisk or shake in a closed jar until fully incorporated and slightly frothy. Taste and adjust sweetness if desired.

Assemble the iced coffee

Fill two tall glasses with 1/2 cup ice each (about 1 cup total). Into each glass pour 3/4 cup cold brew concentrate and 1/2 cup of the protein-milk mixture (adjust ratio to taste). Stir gently to combine. If concentrate is very strong, top with a splash of water or extra milk to adjust strength.

Garnish and serve

Sprinkle a light dusting (about 1/4 tsp total) of cinnamon or cocoa powder over each drink if desired. Serve immediately with a straw.
