Preparation

Measure beans

Weigh 60 g of whole bean clean coffee. This yield is intended to brew roughly 900 ml of brewed coffee (about 6–7 cups depending on cup size) at a coffee-to-water ratio of 1:15. Adjust proportionally for more or less.

Heat water

Bring 900 ml + 200 ml (total 1,100 ml) of filtered water to a boil. Use the extra 200 ml to warm equipment and rinse the filter. Once boiling, remove from heat and let sit 30–45 seconds (target temperature ~92–96°C / 198–205°F) for optimal extraction.

Prepare equipment

If using a paper filter (dripper), place filter in dripper and rinse with hot water to eliminate any paper taste and preheat the dripper and carafe. If using a metal filter or French press, warm the vessel with hot water and discard the warming water.

Grinding

Grind beans

Grind the 60 g whole beans to the grind size appropriate for your brewing method: medium-coarse for pour-over (similar to sea salt), coarse for French press, or medium-fine for AeroPress. Grind immediately before brewing for maximum freshness.

Brewing (Pour-over example, adjust for other methods)

Set coffee bed

Place the dripper on the carafe or mug, add the rinsed filter back in and add the freshly ground coffee. Level the bed by gently shaking so the grounds are even.

Bloom

Start a timer. Pour 90 ml of hot water (approximately twice the weight of the coffee) evenly over the grounds, saturating all grounds. Allow the coffee to bloom for 30–45 seconds to release trapped CO2 and enable even extraction.

Main pour

After the bloom, slowly pour the remaining 810 ml of water in steady concentric circles or pulses, avoiding pouring directly on the filter. Aim to finish pouring by about 2:30–3:00 minutes. Allow brew to draw down until about 3:30–4:00 minutes total. Adjust pour speed and grind size if extraction is too fast or too slow.

For French press

If using a French press, add grounds to carafe, pour in all 900 ml hot water, stir gently to saturate grounds, place the lid with the plunger up and steep for 4 minutes, then press slowly and evenly.

For AeroPress

Use a medium-fine grind, add grounds to AeroPress, pour ~200–250 ml hot water, stir 10 seconds, steep 1–1.5 minutes, then press. Repeat batches as needed to yield total volume.

Finishing & Serving

Serve

Once brewed, pour coffee into pre-warmed cups. Taste to confirm clarity and purity. Clean coffee is meant to be enjoyed black to experience its full purity; add milk or sweetener only if desired.

Store beans

Store unused whole beans in an airtight container in a cool, dark place. Use within 2–4 weeks of roast date for best flavor. Do not refrigerate or freeze frequently (only freeze in an airtight container if long-term storage is required).

Clean equipment

Rinse and dry grinder, dripper, carafe, or French press immediately after use to prevent buildup and preserve purity of future brews.
