Cook pasta

Bring a large pot of salted water to a rolling boil. Add the 12 oz dry pasta and cook according to package directions until al dente (usually 8–10 minutes). Stir occasionally to prevent sticking.

Reserve 1/2 cup of the hot pasta cooking water, then drain the pasta in a colander and rinse briefly under cold running water to stop cooking and cool the pasta for salad. Shake off excess water.

Prepare vegetables while pasta cooks: halve cherry tomatoes, dice the cucumber, thinly slice the red onion, and slice banana peppers. If banana peppers are jarred, drain them well.

Place the cooled pasta in a large mixing bowl. Add the tomatoes, cucumber, sliced red onion, drained banana peppers, and chopped parsley. If using cheese, add it now.

Dressing

In a medium bowl or mason jar combine 1 cup extra-virgin olive oil, 1 tablespoon red wine vinegar, 2 tablespoons lemon juice, 1 teaspoon Dijon mustard, 1 teaspoon honey (or sugar), minced garlic, 1 teaspoon dried oregano, 1 teaspoon salt, and 1 teaspoon black pepper.

Whisk vigorously until the dressing emulsifies and becomes slightly thickened, or screw the lid on the jar and shake for 20–30 seconds. Taste and adjust seasoning — add more salt, pepper, or lemon juice as desired.

If the dressing tastes too sharp or thick, whisk in 1–2 tablespoons of the reserved pasta cooking water to loosen and round the flavor. Use up to the reserved 1/2 cup if needed, adding gradually.

Pour about two-thirds of the dressing over the pasta and vegetables and toss gently to coat evenly. Reserve the remaining dressing to serve or to add later if the salad needs more moisture.

Taste and adjust: add additional dressing, salt, pepper, or lemon juice if desired. If the salad seems dry, add a couple tablespoons of the reserved pasta water and toss again.

Cover and refrigerate for at least 30 minutes to allow flavors to meld. The salad can be served chilled or at cool room temperature. Before serving, give it a final toss and add any additional parsley or cheese as garnish.
