Cook hot dogs

Choose your preferred method: grill over medium-high heat for 6–8 minutes turning occasionally until browned and heated through; or pan-sear in a lightly oiled skillet over medium heat for 6–7 minutes; or simmer in water for 5 minutes then briefly sear for color. Keep hot.

Toast buns

Melt 2 tbs butter in a skillet over medium heat. Split buns and place cut-side down in the skillet, toasting 1–2 minutes until golden and slightly crisp. Remove and keep warm.

Nacho Cheese Sauce

Make a roux

In a medium saucepan over medium heat, melt 2 tbs butter. Whisk in 2 tbs flour and cook 1–1.5 minutes, stirring, until the raw flour smell is gone but it hasn't browned.

Add milk and seasonings

Gradually whisk in 1 cup whole milk until smooth. Add 1/2 tsp ground cumin, 1/2 tsp paprika, 1/2 tsp salt, 1/4 tsp black pepper, and 1/2 tsp hot sauce. Bring to a gentle simmer, whisking, and cook until slightly thickened, about 2–3 minutes.

Melt in cheese

Reduce heat to low. Remove pan from direct heat momentarily and stir in 2 cups shredded sharp cheddar and 1/2 cup shredded Monterey Jack a handful at a time, stirring until smooth before adding more. Return to very low heat and stir until fully melted and silky. If sauce is too thick, whisk in up to 2–4 tbs additional milk to reach desired pourable consistency. Taste and adjust seasoning.

Keep warm

Keep sauce over the lowest heat, covered, or transfer to a small slow cooker or insulated container to maintain temperature while assembling dogs.

Pico de Gallo

Combine 2 cups diced tomatoes, 1/2 cup diced onion, 1/4 cup chopped cilantro, 2 tbs fresh lime juice, 1/2 tsp salt, 1/4 tsp black pepper, and 1/2 seeded/minced jalapeño (if using) in a bowl. Mix gently, taste, and adjust lime or salt. Let rest 10–15 minutes at room temperature to meld flavors. Chill if not using immediately.

Pickled Jalapeños

If using store-bought pickled jalapeños, drain and pat dry. If quick-pickling fresh jalapeños: slice 1–2 jalapeños, bring 1/2 cup white vinegar, 1/2 cup water, 1 tsp sugar, and 1 tsp salt to a simmer, pour over jalapeños in a jar, cool to room temp and refrigerate at least 30 minutes. Use 3–4 slices per hot dog or to taste.

Crunchy Topping

Place nacho cheese tortilla chips in a zip-top bag and crush lightly with your hands or a rolling pin to create bite-sized pieces. Reserve in a bowl near the assembly station.

Assemble Loaded Nacho Dogs

Place a toasted bun on a plate. Insert a hot dog into the bun. Spoon 3–4 tbs (or to taste) of warm nacho cheese sauce over the hot dog, letting it drizzle down the sides.

Top with 2–3 tbs pico de gallo per dog, then add 3–4 pickled jalapeño slices (adjust for heat preference).

Sprinkle about 1/3 cup crushed nacho cheese chips over each dog for crunch (or distribute the 2 cups across 6 dogs).

Finish with optional garnishes: a drizzle or dollop of sour cream (about 1 tsp–1 tbs), and sprinkle chopped green onions. Serve immediately while cheese is warm and chips are crisp.
