Prepare bread

Spread 1 tablespoon of softened unsalted butter evenly over the outside face of each bread slice. If using mayonnaise instead, spread 1 teaspoon on each outside face. The buttered sides will be the exterior that contacts the skillet.

Assemble

Place one slice of bread buttered-side down on a plate or cutting board. Top with two slices of American cheese, making sure they cover most of the bread. Place the second bread slice on top, buttered-side up.

Preheat pan

Heat a nonstick skillet or griddle over medium-low heat for about 1–2 minutes. The lower heat ensures cheese melts without the bread burning.

Grill first side

Place the sandwich in the skillet. Cook 3–4 minutes or until the underside is golden brown. Press gently with a spatula; if cheese is slow to melt, add 1 teaspoon of water to the pan away from the sandwich and quickly cover with a lid for 30–45 seconds to create steam and speed melting.

Flip and finish

Carefully flip the sandwich and cook the second side 2–3 minutes until golden brown and cheese is fully melted. Total cook time should be about 5–7 minutes. Transfer to a cutting board and let rest 1 minute, then cut in half for serving.

Preheat oven and prepare fries: Preheat the oven according to the frozen fries package (typically 200–220°C / 400–425°F). On a baking sheet, toss frozen fries with 1 teaspoon vegetable oil and spread in a single layer. Sprinkle lightly with 1 teaspoon salt (adjust to taste).

Bake: Bake for the package-recommended time, usually 12–20 minutes, turning once halfway, until golden and crisp. Remove from oven and keep warm until sandwich is ready.

Prepare fruit: Combine 1/2 cup seedless grapes, 1/2 cup diced apple or clementine segments, and 1/4 cup strawberry halves in a small bowl. Drizzle 1/2 teaspoon lemon juice over the fruit and toss gently to coat. Chill briefly or serve immediately alongside the grilled cheese.
