Prep

Preheat oven to 400°F (205°C) if baking, or prepare a nonstick skillet over medium heat if pan-cooking. Line a baking sheet with parchment or lightly oil it. Finely grate the carrot and chop or finely shred the spinach so moisture is minimized — squeeze excess liquid from spinach with a towel.

Mix

In a large bowl combine ground chicken, breadcrumbs, shredded cheddar, grated carrot, chopped spinach, egg, milk, minced garlic, salt, and pepper. Mix gently with a spatula or clean hands until ingredients are evenly distributed. If the mixture feels too wet to shape, add 1–2 tablespoons more breadcrumbs; if too dry, add 1 tablespoon milk.

Shape

Use a tablespoon or small cookie scoop to portion the mixture into 1½–2 tablespoon-sized portions. Roll lightly into balls or flatten into small patties, about 1–1½ inches across. You should get roughly 18–24 bites depending on size.

Cook - Oven method

Arrange the bites on the prepared baking sheet with space between. Brush or spray lightly with olive oil. Bake at 400°F (205°C) for 12–14 minutes, then flip each bite and bake another 6–8 minutes, or until internal temperature reaches 165°F (74°C) and edges are golden. Total bake time ~18–22 minutes.

Cook - Stovetop method

Heat 1 tablespoon olive oil in a large nonstick skillet over medium heat. Add bites in a single layer without crowding (cook in batches). Cook 3–4 minutes per side until golden brown and cooked through (internal temperature 165°F / 74°C), pressing gently to ensure even contact. Drain on paper towels briefly.

Cool & Serve

Allow bites to rest 3–4 minutes so they firm up and aren’t too hot for kids. Serve warm with honey-mayo dipping sauce, or place in mini buns with a little sauce for sliders. Offer cucumbers, carrot sticks, or ketchup on the side.

Dipping Sauce (Kid-Friendly Honey-Mayo)

In a small bowl whisk together mayonnaise, honey, lemon juice, mustard (if using), and a pinch of salt until smooth. Taste and adjust sweetness or acidity: add an extra 1/2 teaspoon honey for sweeter or 1/4 teaspoon lemon juice for tang. Chill until ready to serve.

Optional Serving

To make mini sliders: split mini buns, spread a little sauce on both sides, place a warm chicken bite on the bottom, top with extra cheese or a cucumber slice if desired, and close. Keep leftovers in an airtight container in the fridge for up to 3 days; reheat in oven at 350°F (175°C) until warm.
