Score and position hot dogs
Using a sharp knife, make shallow diagonal slashes along each hot dog (3–4 shallow cuts) to help render fat and ensure even contact with the griddle. Place the hot dogs on the hot flat-top in a single layer with space between them.
Press and sear (the 'flat-top' step)
Immediately after placing dogs on the griddle, use a heavy spatula or a press (a second spatula or a grill press) to press each hot dog flat against the surface. Hold pressure for 20–30 seconds so the hot dog makes broad contact and begins to sizzle and flatten slightly. Release pressure and let cook without moving for 1–1.5 minutes to develop a golden-brown, slightly charred surface. Turn and repeat the press on the other side so both faces have good caramelization (another 1–2 minutes). Total cook time per dog should be about 4–5 minutes until heated through and browned.
Assemble hot dogs
Place each seared hot dog into a toasted bun. Squeeze 1 tablespoon mustard along the length of each hot dog (adjust to taste). Spoon 1 tablespoon diced sweet onion over each dog. Add 1 teaspoon relish if using.

Before placing hot dogs on the griddle, add 2 tablespoons neutral oil to the hot surface and spread into a thin film. The oil helps promote even browning and prevents sticking. If the griddle is cast iron and well seasoned, you can omit the oil or use only 1 tablespoon.
If you want extra sear and a buttery finish, drop the remaining 1 tablespoon of butter on the griddle next to the hot dogs during the last 30 seconds of cooking, tilt the griddle slightly (or use a spoon) and spoon melted butter over the tops of the pressed dogs once or twice.

Cheesy melt
If using shredded cheese, after placing the hot dog in the bun, sprinkle about 1/4 cup shredded cheese over each dog. Return assembled dogs (open-faced) to the griddle briefly, cover loosely with a metal bowl or lid for 20–30 seconds to melt the cheese, then remove and serve.
Season and garnish
Lightly season the assembled hot dogs with a pinch of kosher salt (about 1/4 teaspoon per two dogs) and a few grinds of black pepper. Add pickled jalapeños if you like heat (about 1/2 tablespoon per dog). Serve immediately while hot and crispy.
