Prepare sugar syrup
In a medium heavy-bottomed saucepan combine 2 cups granulated sugar, 2 tablespoons light corn syrup, 2 teaspoons water and a pinch of fine salt. Stir gently just to combine; avoid splashing sugar onto the sides of the pan.
Place a candy thermometer clipped to the side of the pan, bring the mixture to a boil over medium-high heat without stirring. If sugar crystals form on the sides, brush them down with a wet pastry brush.
Allow the syrup to reach 320°F (160°C) — the hard crack stage for cotton candy (this usually takes 5–8 minutes once boiling). Watch carefully to avoid burning; the syrup should be clear and slightly amber.
When the syrup reaches temperature, immediately remove the pan from heat and let sit 30 seconds. Stir in 1 teaspoon clear vanilla (or other extract) and 1 teaspoon gel food coloring until evenly incorporated. The syrup will be hot and fluid; work carefully.
Flavor & color
Allow the colored, flavored syrup to cool slightly (1–2 minutes) so it is still fluid but not actively bubbling. This keeps it in the optimal viscosity for spinning into threads.

Prepare your cotton candy machine according to manufacturer instructions and plug it in to preheat. Lightly mist the spinning head or bowl with nonstick cooking spray (1 tsp) if recommended by your machine manual.
With oven mitts or heatproof gloves, carefully spoon small amounts (about 1–2 teaspoons at a time) of the hot sugar syrup into the machine’s spinning head or reservoir as it turns. Do not pour all syrup at once; add gradually to maintain a steady flow and avoid clogging.
If strands clump, stop adding syrup, allow the head to clear for a few seconds, then resume. When finished, turn off the machine and let it fully stop before cleaning. Dispose of any remaining syrup carefully; it will be extremely hot.
Serve cotton candy immediately on cones/sticks for best texture. Store in airtight bags at room temperature up to 24 hours (texture will degrade and become sticky over time).
