Method
Burger
Prepare patties
Divide the ground beef into two equal portions (about 8 oz each). Gently form each portion into a loose ball, then press into a patty about 3/4 inch thick and slightly wider than the bun (they will shrink while cooking). Do not overwork the meat. Make a shallow dimple in the center of each patty with your thumb to help them cook evenly.
Season
Generously season both sides of each patty with kosher salt and freshly ground black pepper just before cooking.
Cook patties
Heat a large skillet or griddle over medium-high heat until hot. Add 1 tablespoon of vegetable oil and swirl to coat. Place patties on the hot surface and cook undisturbed for 3 to 4 minutes until a brown crust forms. Flip and cook 2 to 3 minutes more for medium (adjust time for desired doneness).
Add cheese
About 30–45 seconds before the patties are done, lay two cheese slices on each patty. Cover the pan or place a lid briefly to melt the cheese, about 30 seconds.
Seasoned Mayo (optional)
In a small bowl, whisk together mayonnaise, yellow mustard, sweet pickle relish, lemon juice, and black pepper until smooth. Taste and adjust seasoning. Use about 1 tablespoon per burger or refrigerate up to 3 days.
Fries (to serve)
Cook fries
Prepare fries according to package directions if using frozen (bake or air-fry). If using fresh potatoes, cut into strips, rinse and dry, toss with 1 tablespoon oil and 1 teaspoon salt, then bake at 425°F (220°C) for 20–30 minutes, turning halfway, until golden and crisp.
Season and serve
