Combine and simmer
In a small saucepan, combine 1 cup pitted cherries (fresh or frozen), 1 cup granulated sugar, and 1/2 cup water. Bring to a gentle simmer over medium heat, stirring occasionally so the sugar dissolves and cherries release their color and flavor, about 5–7 minutes.
Macerate and strain
Remove from heat and let the mixture steep for 10 minutes to intensify flavor. Mash the cherries lightly with the back of a spoon to extract juice. Strain through a fine-mesh sieve into a bowl or jar, pressing on solids to extract as much syrup as possible. Discard solids and let syrup cool to room temperature before using. Refrigerate leftover syrup up to 2 weeks.
Build the cocktail
Fill a Collins glass or highball with about 1 cup of cubed ice.
Add 2 oz Tito's Handmade Vodka to the glass.
Pour in 1 oz fresh lime juice (about 1 medium lime) and 0.75 oz cherry syrup (or maraschino cherry juice) followed by 0.5 oz simple syrup. If you prefer less sweetness, reduce the simple syrup to 0.25 oz.
Give the mixture a gentle stir (about 6–8 revolutions) to combine the spirits, citrus, and syrups without flattening the carbonation that will be added next.
Top with 3 oz club soda or sparkling water. Stir once gently to integrate.
Garnish with 2 maraschino cherries and 1 lime wheel or wedge on the rim. Optionally, drop one cherry into the drink for extra color and aroma.
Serve immediately with a straw. Encourage the guest to stir briefly before sipping if the syrup has settled.
