Prep chicken
Trim excess fat from the chicken thighs and cut into bite-size pieces, about 1 to 1 1/2 inches. Pat the pieces dry with paper towel to remove surface moisture.
Add chicken to the marinade and mix well so every piece is coated. Cover and refrigerate for 30 minutes to 1 hour. For more flavor you can marinate up to 4 hours but avoid overnight to prevent the texture from becoming mushy from the salt and acid.
Coating
While the chicken is marinating, combine potato starch, all-purpose flour, and baking powder in a shallow bowl or large plate. Whisk to fully incorporate and break up any lumps.
Remove chicken from the refrigerator about 10 minutes before frying so it comes closer to room temperature. Drain excess marinade by letting pieces sit in a colander for a minute; do not rinse. Lightly pat again if very wet—some surface marinade helps coating stick.
Working in batches, dredge each piece of chicken in the starch-flour mixture, pressing gently so the coating adheres and creates an even layer. Shake off excess.
Frying & Serving
Heat oil in a heavy pot or deep skillet to 340°F (170°C) for the first fry. If you don't have a thermometer, heat until a small piece of coating sizzles and slowly rises to the surface. Use enough oil to submerge most pieces (about 2–3 inches deep).
Raise the oil temperature to 375°F (190°C). Second fry: Return chicken in batches and fry for an additional 1 to 2 minutes until deep golden brown and crisp. Internal temperature should reach 165°F (74°C). Remove and drain on a wire rack. Sprinkle a light pinch of salt immediately after frying if desired.
Serve hot with lemon wedges, a dollop of Japanese mayonnaise, and shredded cabbage or greens. Karaage is best eaten immediately while crisp. Leftovers can be reheated in a 400°F (200°C) oven for 8–10 minutes to re-crisp.
