Select ripe Chardonnay grapes. Ensure they are free from rot and have reached optimal sugar levels.

Harvesting Grapes

Crush the grapes gently to release the juice. Press the crushed grapes to extract all juice.

In a sanitized fermentation vessel, combine the grape juice, yeast, and sulfur dioxide. Cover and allow to ferment for 2-3 weeks at a controlled temperature of 15-20°C (59-68°F).

Fermentation

After fermentation, add lemon zest and fresh pear slices to the wine. Stir gently to incorporate.

Adding Flavor Enhancers

If desired, add honey to taste for a touch of sweetness, adjusting until the desired flavor profile is achieved.

Sweetening (optional)

Once flavoring is complete, siphon the wine into sanitized bottles, leaving some space at the top. Seal with corks.

Bottling

Store the bottles in a cool, dark place to age for at least 6 months. This will help develop the wine's character and enhance the floral and citrus notes.
