Pat the fish dry inside and out with paper towels. Make 3 diagonal slashes on each side of the fish, about 1/2 inch deep. This helps the marinade penetrate and ensures even cooking.

Season the cavity and slashed surfaces with 1 tablespoon kosher salt and 1/2 teaspoon black pepper, rubbing gently so the seasoning gets into the slashes and cavity.

In a small bowl combine minced garlic, lime juice, chopped cilantro, ground cumin, remaining 1/2 tablespoon salt, remaining 1/2 teaspoon black pepper, and hot sauce if using. Stir to make a loose paste.

Rub the garlic-lime mixture all over the fish and inside the cavity, working it into the slashes. Let the fish marinate at room temperature for 20–30 minutes or refrigerate for up to 2 hours. If refrigerated, bring the fish back to room temperature for 20–30 minutes before frying.

Coating

While the fish marinates, combine all-purpose flour, cornstarch, paprika, garlic powder, onion powder, cayenne, 1 teaspoon salt, and 1/2 teaspoon black pepper in a wide shallow dish. Whisk to evenly distribute spices and break up any lumps.

Shake off excess marinade from the fish so the coating will adhere without becoming soggy. Dredge the fish in the seasoned flour mixture, pressing lightly so the coating adheres into the slashes and onto the skin. For a thicker crust, press a second light layer of the flour mixture onto the fish.

Place the coated fish on a wire rack for 5–10 minutes to let the coating set; this reduces loss of coating in the oil.

Frying and Serving

Heat Oil

Pour oil into a large, deep skillet, frying pan, or Dutch oven to a depth of about 1 to 1.5 inches (roughly 2–3 cm). Heat oil over medium-high heat until it reaches 350°F (175°C). If you don’t have a thermometer, test by dropping a pinch of flour into the oil — it should sizzle and brown slowly.

Carefully lower the fish into the hot oil using tongs or two spatulas. If the fish is large for the pan, fry one side first, then gently flip to fry the other side; work carefully to avoid splashing. Fry the fish until golden brown and cooked through, about 5–7 minutes per side depending on thickness (internal flesh should be opaque and flake easily, 145°F/63°C in the thickest part).

Adjust heat as needed to maintain 320–350°F (160–175°C) so the coating crisps without burning. If the fish browns too quickly, lower the heat a bit; if the oil stops bubbling, raise it slightly.

When done, transfer the fish to a plate lined with paper towels or a wire rack set over a sheet pan to drain excess oil. Let rest 3–5 minutes.

Serve the fried red snapper whole or portioned, garnished with fresh lime wedges and cilantro sprigs. Offer the optional dipping sauce on the side. Squeeze lime over the fish just before eating.

Discard any leftover oil safely once cooled, or strain and store for reuse if clean and unused for strong flavors.
