Building the Cocktail
Add citrus, sweetener and aromatics
Add 0.5 oz fresh lemon juice, 0.25 oz simple syrup, 0.5 oz egg white (or aquafaba) and 2 dashes orange bitters to the shaker with the spirits.
Dry shake
Without ice, seal the shaker and shake vigorously for 15–20 seconds to emulsify the egg white and create foam. This step builds volume and a silky texture.
Wet shake
Open the shaker, add ice, then shake vigorously for 12–15 seconds until chilled and the outside of the shaker feels cold (about frosty).
Optional dusting
If using edible pearl or luster dust, add a pinch into the shaker before the final wet shake or sprinkle lightly on the finished foam to achieve an iridescent, sea-like sheen.
Straining & Serving
Double strain
Remove the chilled glass of ice water (if used) and double-strain the cocktail into the coupe using a Hawthorne strainer and a fine mesh strainer to ensure a velvety foam and remove ice shards.
Garnish
Express a lemon twist over the surface to release oils, run it around the rim and drop it into the drink. Add a small edible flower or a mint sprig gently on the foam for a striking presentation. If you didn't dust earlier, you can very lightly dust the foam now with the pinch of pearl dust for a shimmering finish.
Serve
Serve immediately. The drink is best enjoyed with the layered blue-green hue and silky foam texture intact.
Notes & Substitutions
For a vegan version, substitute 0.5 oz aquafaba for the egg white and shake an additional 5–10 seconds during the dry shake to build foam. Adjust sweetness to taste; melon liqueur adds sweetness so you may reduce simple syrup if desired. Use a London dry or floral gin depending on the desired botanical lift. Blue curaçao provides color and orange flavor—swap for triple sec and a drop of blue food coloring if necessary.
