Method
Prep
Chill glass and measure
Chill a highball or Collins glass by filling with ice and water; set aside. Measure out all spirits, juices, simple syrup, and vermouth so they are ready to add quickly.
Make simple syrup in advance if needed by heating equal parts sugar and water until sugar dissolves; cool before using.
Build & Mix
Muddle mint
In a cocktail shaker, add the fresh mint leaves and the simple syrup. Gently muddle 4–6 times—just to bruise the leaves and release aroma. Avoid over-muddling to prevent bitterness.
Add spirits and citrus
Add the gin, white rum, blue curacao, dry vermouth, fresh lime juice, and fresh grapefruit juice to the shaker with the muddled mint.
Shake with ice
Add 6–8 ice cubes to the shaker. Shake vigorously for 10–12 seconds until the outside of the shaker becomes frosty and well chilled.
Finish & Serve
Double strain
Double-strain the shaken cocktail over the cracked ice using a fine mesh strainer and the shaker's strainer to remove mint bits and small ice shards.
Top and season
Gently pour 2 oz chilled club soda over the cocktail to create a light misty effervescence. Sprinkle a very small pinch of fine sea salt over the top to brighten flavors.
Garnish
Express the grapefruit twist over the drink to release oils, rim the glass lightly with it and drop it in, then add a mint sprig slapped between palms and placed on top for aroma.
Serve immediately with a cocktail straw. Advise guests to stir lightly once to incorporate the soda and salt before sipping.
