Almond Nougatine (crispy layer)
Prepare almonds
Toast the almonds on a baking sheet in a 350°F (175°C) oven for 8–10 minutes until fragrant and lightly golden. Let cool, then roughly chop. Set aside.
Make caramel base
In a heavy-bottomed skillet or saucepan over medium heat, combine 0.75 cups granulated sugar and 2 tablespoons light corn syrup. Stir gently until sugar dissolves, then stop stirring and let mixture bubble. Watch color closely and swirl pan occasionally until it reaches a deep amber (about 5–7 minutes).
Finish nougatine
Remove pan from heat and immediately stir in 2 tablespoons unsalted butter until melted, then quickly stir in the toasted chopped almonds, 2 teaspoons flour, and 1/4 teaspoon fine sea salt to combine. Work quickly so caramel doesn't harden in pan.
Form thin sheet
Line a baking sheet with parchment. Pour the warm nougatine mixture onto the sheet and use an offset spatula to spread into a very thin, even layer (~1/8 inch or thinner). If you want shards, spread thinner. Let cool completely at room temperature (15–20 minutes) until set and brittle.
Break into pieces
Once cool, break/nibble the nougatine into small shards or coarse crumbs suitable for layering. Reserve about 3/4 cup of crumbs for layering; any extra can be stored airtight.
Milk Chocolate Mousse (layers)
Warm milk and sugar
In a small saucepan, combine 1/2 cup whole milk and 1/4 cup granulated sugar. Warm over medium heat until sugar dissolves and milk is steaming but not boiling (do not scald).
Cook custard
Cook the mixture over low-medium heat, stirring constantly with a wooden spoon or spatula, until it thickens enough to coat the back of the spoon (about 170–175°F / 77–80°C). Do not boil. Remove from heat.
Melt chocolate and finish base
Place 10 oz chopped milk chocolate in a heatproof bowl. Pour the hot custard over the chocolate and let sit 1 minute, then stir until smooth. Stir in 2 tablespoons unsalted butter, 1 teaspoon vanilla extract, and 1/8 teaspoon fine sea salt until fully incorporated. Let the chocolate mixture cool to room temperature (about 15–20 minutes).
Whip cream
While chocolate cools, whip 2 cups cold heavy cream to medium peaks (soft-to-medium holds). Do not overwhip; you want a silky texture for folding.
Fold mousse
Fold one-third of the whipped cream into the cooled chocolate base to loosen it, then gently fold in the remaining cream in two additions until uniform and airy. Keep mousse chilled if assembly will be delayed.
Assembly & Finish
Layering
Select serving vessels (6 small glasses or ramekins, about 6–8 oz each). Spoon or pipe about 1/3 of the milk chocolate mousse into the bottom of each glass. Sprinkle a thin, even layer of nougatine crumbs (about 1–2 tablespoons) over the mousse. Add another 1/3 of the mousse, a second scatter of nougatine, then finish with the remaining mousse on top.
Chill to set
Cover the assembled desserts and refrigerate for at least 2 hours (ideally 3–4 hours) to allow mousse to firm and flavors to meld.
Finish and serve
Just before serving, dust each top lightly with a pinch of unsweetened cocoa powder (use about 1 teaspoon total for all servings). Garnish with sliced toasted almonds and a mint leaf as desired. Serve chilled.
