Make syrup

Combine honey and water in a small saucepan over low heat. Stir until honey fully dissolves and mixture is clear, about 2–3 minutes. Remove from heat and stir in bergamot zest (or 2 drops bergamot oil) to infuse for 10 minutes. Strain through a fine mesh if using zest. Cool to room temperature. Syrup will keep refrigerated in a sealed container for up to 10 days.

Dry shake

Add gin, fresh lemon juice, honey-bergamot syrup, Aperol, egg white, and orange bitters to a cocktail shaker (no ice). Secure the lid and shake vigorously for 20–25 seconds to emulsify the egg white and create a silky foam.

Wet shake

Add a large handful of ice to the shaker. Shake again vigorously for 12–15 seconds until the exterior of the shaker is very cold and the mixture is well-chilled.

Strain and serve

Double strain the cocktail into a chilled coupe or Nick & Nora glass using a fine mesh strainer to remove ice shards and any coagulated bits. The drink should have a smooth, creamy foam head.

Garnish

Lightly dust a small pinch (about 0.1 tsp) of edible gold dust over the foam using a small spoon or a brush for a subtle shimmer. Float a thin lemon wheel or a twist on the foam, and optionally tuck a micro basil or thyme sprig alongside for aromatic lift.

Serve

Present immediately while foam is fresh. Sip slowly to experience the layered citrus, floral bergamot-honey sweetness, the gentle bitter of Aperol, and the herbal gin backbone.
